Pumpkin Spice Latte Panna Cotta

Ingredients
2 cups Organic Heavy Cream
½ cup Thrive Market Organic Pumpkin
½ to ¾ cup Espresso, freshly brewed (add amount according to preference)
1 teaspoon Thrive Market Organic Pure Vanilla Extract
1 teaspoon Pumpkin Pie Spice
½ cup Coconut Sugar
2 tablespoons Maple Syrup (grade A)
2 ¼ teaspoon powdered gelatin
3 tablespoons water
Coconut whipped cream
Cinnamon stick

Directions
Sprinkle gelatin over water and let stand until evenly moistened, about 5-10 minutes.

In a medium saucepan add heavy cream and pumpkin puree and whisk until smooth.

Add in freshly brewed espresso, vanilla extract, pumpkin pie spice, coconut sugar, maple syrup whisk and bring mixture to a simmer over medium heat. Once it begins to simmer, then turn off.

Remove from heat, add the gelatin and whisk until fully dissolved.
Pour panna cotta mixture a small glass, ramekin, or mold and let it cool to room temperature.

Cover with plastic wrap and refrigerate until set, at least 4 hours or overnight.

Top off with coconut whipped cream and a cinnamon stick!
