Blueberry Goat Cheese Ice Cream Sandwich
Ingredients
2 cups of Trader Joe’s French Vanilla ice cream, softened
½ log of Silver Goat Chevre goat cheese, softened
4–5 sprigs of fresh rosemary (based upon your taste preference)
1 cup of Trader Joe’s organic wild blueberries, thawed and drained, plus one teaspoon for garnish

Mix ice cream and goat cheese with a hand mixer on low to medium. Mix until well blended and most of the lumps are gone.
Gently fold in blueberries. Then finely chop rosemary, and stir in. Pour mixture back into the ice cream container, cover and freeze until solid.
Add ice cream mixture in between graham crakers and top off with a teaspoon of blueberry and fresh rosemary.
Serve immediately! Enjoy!
